I only work with fresh products, favoring local produce and sustainable agriculture. After all, you can only make good dishes with good products!

It is important for me to work with passionate professionals, artisans who know their own products.

Finally, I am committed to producing and working with the greatest respect for hygiene standards.

Fresh & seasonal products
Using fresh, seasonal products is obvious. I want to highlight the terroirs and respect as best I can what nature gives us.

Local producers
Whenever possible, I source from local artisans and producers. Valuing these professionals and paying them for their work means being part of a circle of value specific to the artisan profession.
